Healthy lunch – chickpea salad

Her is today’s lunch – chickpea and kale salad:

1 1/2 cup of chickpeas
1 cup of wheat orzo
2 cups of kale
1/4 of a red onion
1/4 cup of crumbled feta cheese
1 tbsp of vinegar
1 tbsp of olive oil
1 slice of lemon


  • Cook chickpeas for about 1-1.5 or until tender
  • Prepare orzo as directed on the package – al dente
  • Finely chop the onion
  • Wilt kale on a skillet in olive oil for 1-2 minutes
  • Mix chickpeas, orzo, red onion, and wilted kale together
  • Mix separately olive oil, vinegar, and squeeze in there the lemon slice, to make the dressing
  • Pour the muxture over chickpeas
  • Season with salt and sprinkle with feta cheese

*Note: Kale can be replaces with spinach
